How to cook jollof rice
Step 1: Put the pieces of chicken in a pan. Ensure that is clean and dry. Add salt
Step 2: In another container, put the pepper, garlic, ginger and one onion. Wash them thoroughly and blend them.
Step 3: Pour the blended mixture into the pan containing the chicken.
Step 4: Put the pan on heat and let the chicken steam for about 10 minutes.
Step 5: In another pan, slice one onion and fry them with vegetable oil to make stew. After cooking for two minutes, add a considerable amount of tomato puree.
Step 6: Blend the remaining onion, tomatoes and pepper. Add the mixture to the onion in the pan. Let it cook for 10 minutes as you stir so that it does not stick to the pan.
Step 7: When the chicken is ready, remove it from the pan and deep fry it. Deep frying ensures that it becomes crispy. The remaining stock should be added to the stew and let to cook for 5 minutes. At this stage, you should put the chicken aside.
Step 8: Add the mixed veggies to the stew and keep turning the food for few minutes.
Step 9: Add the rice and keep stirring until it is cooked. This should take 20-30 minutes depending on the heat.
Step 10: Now that your jollof rice is ready, serve it with the chicken. You add salad.
